Pork Loin Chops with Sauerkraut
Whole Life Eating is a great website for Whole 30 type recipes. Tom Denham, a Whole 30 advocate and resource in the Whole 30 website, posts frequently and has great additions to a paleo way of eating.

Ingredient list:
2 boneless pork loin chops
1 jar or package of sauerkraut
Cayenne pepper
Dried rosemary
Garlic powder
Black pepper
Salt
Directions:
Pre-heat non-stick grill-pan or skillet over medium heat. Season both sides of pork chops with salt, garlic powder, cayenne pepper, and rosemary. Lay pork chops in the hot grill-pan and let sear undisturbed for 5 minutes. Turn with tongs to let the second side sear for 5 minutes. Open the sauerkraut as the second side of the chops begins to sear and transfer to a microwaveable dish. Heat in the microwave – one serving takes 2 minutes and two servings takes 3-4 minutes. Transfer chops to plates when cooked. Fill the rest of the plate with sauerkraut. Enjoy!
Notes:
No sauerkraut I ever ate was too salty, but some eaters don’t agree. You might want to taste the sauerkraut before heating it. If it is “too salty†for your taste, rinse the sauerkraut by soaking it in plain water and then pour the water off through a slotted spoon or a colander.



That sled drag was so fast that we were actually throwing sparks at one point, and luckily we stopped just before we caught Addi’s rear end on fire.
