Eating Local
If you’ve followed a Whole 30 program, you are aware of the benefits of eating local foods. Fort Collins offers ample opportunities to eat local produce, eggs and meat through CSAs (Community Supported Agriculture), food coop’s like Door-To-Door Organics and Farmer’s markets. If you’re new to the paleo lifestyle, and don’t know where to get started, below are some links to get you started. And, if you still have questions, Robb Wolf recently posted an article by Amber Karnes about how to find and join a CSA. Also, Emergent Fitness offers a coop through Door-To-Door organics at a 10% discount. If you are interested, contact Door-To-Door and mention that you are a part of the coop through Emergent Fitness.

Bacon wrapped asparagus with cilantro flavored mayonnaise – Courtesy of Paleo Diet Recipes

Ingredients
30 asparagus stalks, hard base removed;
10 slices bacon;
1/2 cup paleo mayonnaise;
2 tbsp + 1 tsp lime juice;
1 tbsp + 2 tsp fresh cilantro leaves, finely chopped;
1/4 cup lard or other cooking fat, melted;
Sea salt and freshly ground black pepper to taste;

Preparation
Preheat your oven to 450 F.
Wrap each bacon slice around a bundle made with 3 asparagus stalks and secure with toothpicks if needed.
Place on a rimmed baking sheet and season to taste with sea salt and freshly ground black pepper.
Place in the oven to cook for about 20 minutes.
In the mean time, prepare the mayonnaise by combining the cilantro and lime juice with the mayonnaise and seasoning to taste with salt and pepper.
Remove the bacon wrapped asparagus from the oven and serve with the flavored mayonnaise.
