I love dessert! Especially when I am trying to steer clear (I am doing a 30-day Paleo clean right now). So, I am on the hunt for sugar-free options and I found one in this “Peach Blueberry Crumble.” It is dairy-free, sugar-free and gluten-free and was still delicious! I used frozen peaches and frozen blueberries and it turned out great. It totally satisfied my sweet cravings.

I cannot post this recipe, since it is from a cookbook. All I can say is everyone should get this cookbook! I have tried many recipes and have been very pleased.

I took this to a hoilday party and everyone loved it, they said it was nice to have a summer fruit in the winter time and that it was sweet and tangy! The dressing can be used for bunch of dishes.

Community Support Agriculture in 2010?

Now is the time to start thinking about where you’re going to get your vegetables this summer. At the grocery store you say? That’s so 1999. But you’re in luck, in Northern Colorado we have more CSA’s to choose from than most of the rest of the country. If you are going to sign-up for a CSA now is time. Here are some options we know about:

  • Fossil Creek Farms (south Fort Collins) – owners are training at EmerFit and we may have pick-up at the gym this summer. No website yet but ask me for info (this is where my veggies are coming from this summer). Full share (family of 4) $420 or half share $250. Certified Organic.
  • Happy Heart (north Fort Collins) – great community, one pick-up location, unique farming methods. Full share $450. I got my food here for the last 3 years and would continue to do so if I hadn’t found something 1 mile from my home.
  • Boyle’s Family Farm (Gill, Colorado in Weld County) – all we know is at their website.
  • Grant Family Farms – Probably the biggest CSA in northern Colorado.
  • Cresset Community Farm (Loveland) – Don’t know much about this one either.
  • CSU CSA – I didn’t see any info about 2010. Nice list of other northern Colorado CSAs (including ones not listed here) and lots of educational links about agriculture.

Sometimes I miss having the sweet breakfast breads – like pancakes. I began the hunt for a good pancake recipe that was Paleo approved and came across this one on Crystal’s blog.
I have made these several times and they hit the spot! I like to top them with a strawberry and blueberry puree to sweeten them up a bit. Just remember to keep them small and keep your heat on low-medium so they don’t burn.

Since receiving my Gluten-Free Almond Flour Cookbook, I have made the Pistachio Chicken 4 times! It is amazing! I, also, made this broccoli pepper side dish to go with it.

Pepper Broccoli
1 head broccoli
1/2 – 1 tsp. olive oil
juice and grated zest of 1 lemon
1 red bell pepper, roasted, peeled, seeded and diced

Cut broccoli into bite-size pieces and steam until bright green and crisp-tender. While broccoli is steaming grate lemon zest. Cut lemon in half to add juice to dish later. When broccoli cooked put in a bowl, immediately drizzle with olive oil and toss. Stir in lemon zest and add juice to taste. Add bell pepper. Turn ingredients gently to combine.

Seeing pumpkins everywhere made me crave something with pumpkin in it. So, I decided to give this recipe a try. I had never used fresh pumpkin before (http://www.elanaspantry.com/how-to-roast-a-pumpkin-in-10-steps/) – it was easy! I am not having sugar right now, so I substituted applesauce (1/2 c.) for the agave nectar. The batter smelled just like pumpkin pie – yum! The muffins are super moist and taste good. I would prefer them to be a little sweeter, though. I will have to get a little more creative sweetening them up next time.

Thanksgiving is coming and Dean and I have been talking about what we are going to cook. Do we make it a “cheat” day and make all of the food we used to or do we try and make it as Paleo as possible? Well, after tonight’s recipes, we may just have to go the Paleo route.

First, we tried a “Balsamic Roasted Turkey with Apple Stuffing.” The rosemary and apples made for great flavor and the meat was juicy. This is a recipe we would make again.

Chef’s Review
Before starting CrossFit at EmerFit I did not eat vegetables. Especially those nasty green ones! Well, that changed when I learned about the Paleo Diet and how important it is to my health and performance. (And getting rid of that pesky leftover pregnancy weight!) So, I found it fitting to start my food blogging with a vegetable dish.

I found this recipe “Seasonal Steamed Vegetables” from Performance Menu. I had never tried summer squash before and had only had zucchini a couple of times. I was a little hesitant to try this dish, but was pleasantly surprised. It was super easy to prepare, takes little time to cook and tastes great! It was the perfect side dish to Dean’s awesome steak. I will be making this again soon and trying different veggies keep it interesting.
