Since receiving my Gluten-Free Almond Flour Cookbook, I have made the Pistachio Chicken 4 times! It is amazing! I, also, made this broccoli pepper side dish to go with it.
Pepper Broccoli
1 head broccoli
1/2 – 1 tsp. olive oil
juice and grated zest of 1 lemon
1 red bell pepper, roasted, peeled, seeded and diced
Cut broccoli into bite-size pieces and steam until bright green and crisp-tender. While broccoli is steaming grate lemon zest. Cut lemon in half to add juice to dish later. When broccoli cooked put in a bowl, immediately drizzle with olive oil and toss. Stir in lemon zest and add juice to taste. Add bell pepper. Turn ingredients gently to combine.
